Scrambled eggs w/ veggies and grits

2 large eggs
1/4 c green pepper, tomato, spinach diced (optional)
1 pkg of instant grits
1 tsp butter
salt and pepper, to taste

Heat a saute pan on medium heat, add pan spray or a tad of butter.  Add all of the vegetables and saute for 2 minutes.  Scramble eggs in a bowl and add to vegetable mix and cook until set.  Prepare grits in a small bowl with boiling water and butter.  Add salt and pepper to taste and enjoy!

1 serving:  12 g Protein,  22 g Carbs,  1 g Fiber,  8 g Fat                               Blocks:   2

Note:  substitute 1 small piece of toasted bread with approx. 20 net grams of carbs instead of grits, if you prefer.  Net carbs are total grams of carbs – total grams of dietary fiber.
