Breakfast Muesli


I was really looking forward to having this breakfast muesli this morning that I have concocted to be thirty40thirty.   I started eating it before I took a photo of it! So satisfying and full of goodness - oatmeal, applesauce, coconut water, dried fruit, protein powder, Greek yogurt, nuts and blueberries (or fruit of choice).  I try to buy fresh and local fruit when I can but bought frozen blueberries since they are out of season now here. Make the night before and refrigerate for a quick breakfast bursting with flavors!

      Here are some substitutes: brown rice, millet, quinoa, spelt, wheatberries, amaranth, teff and buckwheat. Also, I’ve found Weetbix makes a gluten free biscuit out of sorghum grains that is good! Just work out how much of any of the above =20g of net carbs (Carbs – Fiber = Net Carbs)
